As the mercury climbs toward 40°C in Bangkok, the city’s culinary scene turns to a centuries-old tradition to beat the heat. Khao Chae, literally meaning “soaked rice,” is a sophisticated Thai dish that acts as the ultimate culinary air-conditioner. This delicacy, which migrated from Mon heritage to the Royal Thai court during the reign of King Rama V, is specifically designed for the sweltering transition into the Thai New Year (Songkran).

The Ultimate Summer Survival Ritual

At its heart is premium jasmine rice, polished to remove excess starch, steamed, and then submerged in ice-cold, candle-smoked water infused with the scent of jasmine and bread flower. It is “summer in a bowl” for three reasons: the chilled floral water provides immediate internal cooling, the light nature of the dish prevents the lethargy caused by heavy curries, and the complex array of sweet-and-savory accompaniments offers a much-needed energy boost. This year, Bangkok’s premier dining destinations are reviving master recipes to offer a refreshing escape through delicate fragrances and time-honored techniques.


HERITAGE AND ARTISTRY

Mandarin Oriental, Bangkok


The Mandarin Oriental Bangkok remains the pinnacle of Thai elegance, and Chef Pom Patchara Pirapak has reached into her own family’s inherited recipes to curate this year’s Khao Chae. The experience is defined by the subtleties of Thai culinary culture, from the precise temperature of the flower-infused water to the selection of the finest jasmine rice grains. It is a dish that is both simple in its cooling intent yet profoundly detailed in its execution.

The presentation is as much a draw as the flavor, featuring intricately carved seasonal vegetables that reflect the artistry unique to Thai high cuisine. For 2026, the hotel offers two iconic ways to enjoy this tradition. The “Khao Chae Classic Box” is a single-person set packaged in a celadon green box adorned with illustrations of the hotel’s historic architecture—a perfect gift for the season. For those wishing to share, the “Pinto” set comes in a traditional tiffin carrier, echoing the Thai culture of communal dining. Both are available at all four Mandarin Oriental branches in Bangkok, ensuring a touch of luxury is never far away.

At The Siam Tea Room’s Asiatique The Riverfront, the experience is an homage to Chao Phraya River. Their exclusive “Khao Chae Chao Phraya” set is a rare opportunity to taste history, as it synthesizes the master recipes of three iconic Thai culinary figures: Thanpuying Kleeb Mahidhorn, Professor Pradit Thaiyanon, and M.L. Toeb Chumsai. Overlooking the majestic Chao Phraya, guests are invited to witness the graceful evolution of Thai gastronomy across generations.

The journey begins with a revitalizing welcome drink of licorice juice, cane sugar, and gooseberry, followed by a unique appetizer of summer fruits stuffed with walnuts. The rice itself is served in cool, aromatic floral water and accompanied by a curated selection of side dishes. Highlights include the fried Banana Pepper stuffed with pork and shrimp wrapped in a fluffy egg lattice, and the innovative fried dried chilies stuffed with stir-fried salmon. Other delicacies include sweet stir-fried fish in coconut sugar glaze, sweet pickled turnip, and deep-fried shallots stuffed with chicken. To finish, a dessert of honey flower jelly with lotus seeds and candied papaya provides a light, sugary end to this riverside retreat.

Located on the ground floor of the Bangkok Marriott Marquis Queen’s Park, the Sukhumvit branch of The Siam Tea Room focuses on the traditional roots of Khao Chae. Emphasizing its journey from the Mon Kingdom to the Royal Thai court, this version is a celebration of meticulous craftsmanship. The setting is a casual yet authentic Thai café atmosphere, perfect for a midday escape from the bustling Sukhumvit streets.

This seasonal menu opens with a revitalizing watermelon kaffir lime soda and the signature “Snowy Santo”—a shaved ice dish with dried pork and bitter orange that offers an instant thermal reset. The main event features jasmine-scented chilled rice served with classic condiments prepared using time-honored techniques. You can expect staples like the deep-fried marinated shrimp paste ball and the deep-fried butterfly pea with pork and shrimp, alongside sweet shredded beef and sweetened shredded fish. The inclusion of deep-fried marinated minced pork with salted tiger fish adds a unique savory depth that distinguishes this branch from its riverside sibling.

THE ART OF THE PAUSE

At the Bangkok Baking Company (BBCO), Chef Tang Tananton Bunnag invites guests to “pause” and reset through his rendition of Khao Chae. Deeply rooted in the spirit of the Songkran festival, this offering reflects a profound respect for heritage. The jasmine rice is gently rinsed and served in chilled, jasmine-scented water, creating a light, aromatic base that is essential for surviving Thailand’s warmest days.

The BBCO set is distinct for its inclusion of nine meticulously prepared condiments, each providing a specific counterpoint to the floral rice. Notable items include fried sweet snakeskin gourami and stir-fried sweet eagle ray, which contribute a depth of texture rarely found in modern versions. These are balanced by savory stuffed bell peppers and fried salted egg yolk. To complete the experience, guests are treated to Som Choon, a sweet-sour Thai summer fruit delicacy, alongside a cooling butterfly pea flower tea with lime. For a more extensive feast, the dish is also featured as a highlight of the International Sunday Brunch at JW Café throughout April.

Known for its sophisticated atmosphere, the restaurant serves a set that focuses on the delicate balance between the chilled jasmine rice and its array of handcrafted accompaniments.
