Drawing inspiration from the residence’s past as Thailand’s first cooking school, Baan Phraya at The Mandarin Oriental has been reimagined as an intimate setting for Chef Patchara “Pom” Pirapak’s craft. Intricate fretwork, original architectural details, and subtle references to the Vanda orchid—a symbol found in Phraya Mahai Savan’s historical writings—set a sophisticated tone where the connection between kitchen and table is central to the experience.
Chef Pom’s ingredients are sourced from trusted local producers across Thailand, from the northern highlands of Chiang Mai to small community farms, alongside fresh herbs and young shoots plucked from a small organic garden beside the house. Among her signature dishes is a refined take on Tom Kha, featuring Prachuap Khiri Khan squid stuffed with young coconut and lightly grilled over charcoal. The galangal-infused broth, enriched with home-grown herbs, is aromatic, creamy, and deeply comforting. Another highlight is the Grilled Surat Thani River Prawn, halved and charred to reveal its natural sweetness, served with a tangy tamarind-chili sauce, a rich tomalley reduction, and a bright turmeric-and-roselle-pickled watermelon rind.
